Sunshine Breakfast Bar

I LOVE BREAKFAST! I like every breakfast food out there; some more than others. I have never turned down a piece of crispy bacon, nor have I ever said no to a pancake. I get up in the morning for breakfast. Again I was on a work trip and this time I found myself in Tempe, Arizona. I did give the hotel breakfast a chance. It was ok, it had the typical seasoned potatoes which are always good, and I ate a bunch of bacon, but I did not care for the eggs. For the next morning I did a quick google search found Sunshine Breakfast Bar and off I went.

The photos of the food on the Sunshine Breakfast Bar website looked amazing. I didn’t even know what I was going to get until I was seated at the restaurant. The staff were incredibly friendly and the restaurant had a few patrons, but wasn’t packed. I immediately ordered coffee and water and then took a few minutes to figure out what I wanted to order. They have a lot of different selections, but I ultimately settled on the sunshine pancake breakfast which came with two eggs, my choice of meat, and short stack of pancakes. To my delight when I ordered I was asked if I wanted cheese on my eggs, which I immediately said yes to. But then the waitress stepped it up a notch and asked if I wanted to upgrade my pancakes to my choice of a specialty pancake. I immediately responded with “Yes, please.” I quickly looked over the specialty pancakes and the lemon ricotta immediately stood out, so I ordered that. And then I added a side of potatoes and upgraded that to be covered in cheese. I was going to be fat and happy.

When my order arrived, I was so happy with my choice. Everything looked amazing. My eggs were cooked to perfection, scrambled hard and covered with gooey cheddar cheese. The eggs were well cooked and not gooey or wet, which I despise. On the side of that I had two pieces of crispy bacon. The bacon was nice and crunchy with a salty flavor. The potatoes were cooked perfectly with just the right amount of seasoning, covered in cooked onions and cheese.

The star of the breakfast, my lemon ricotta pancakes were nice and brown with a dusting of powdered sugar and drizzle of lemon curd. I was in heaven. The pancakes were perfectly cooked. They were so soft and fluffy and that lemon curd gave it a beautiful pop of sourness that was balanced out with the powdered sugar.

This breakfast was the best that I have had in a long time. The atmosphere was chill and friendly with a wonderful staff waiting on the people. Everyone just seemed happy to be there, which made my time there enjoyable. The one thing that I really liked about this place is that I was able to get a whole meal. A lot of restaurants today will do everything a la cart, which I find extremely aggravating. For example, if I would have ordered pancakes at another restaurant, I would have only gotten pancakes and I would have had to order eggs and bacon separately. If you ever find yourself in Tempe, AZ, please go to this restaurant, you will have a great dining experience and leave extremely full.
